Cincinnati Fall Chili (my kids FAVE dinner!!)


1 box of noodles (elbow, radiatore, spagh, etc.??)

2 pounds lean ground beef

1 quart water

1 onion, finely chopped

1 (15 ounce) can tomato sauce

2 tablespoons apple cider vinegar

2 teaspoons Worcestershire sauce

1 clove garlic, minced

1/4 cup chili powder

1 1/2 teaspoons salt

1 teaspoon ground cumin

1 teaspoon ground cinnamon

1/2 teaspoon ground cayenne pepper

1T. allspice

2 bay leafs

There are many variations to Cincinnati chili–this one has been in our family for years–passed down by my husband’s grandparents.

Put all ingredients in large pot, either a crock pot on the lowest setting or on the stove. Make sure ground beef is mashed up and not clumped together. Stir. Let it simmer for a few hours. Check occasionally to make sure it isn’t too hot and doesn’t burn— but if it does get a bit too hot and you catch it in time just add more water to it.

Serve on a bed of noodles. With the kids, I find radiatore or elbow noodles are easiest to eat–but regular spaghetti noodles are often used… shredded cheddar cheese, diced onions, oyster crackers go on top… An easy, filling fall dinner. (If your a vegetarian, use Boca ground beef…. works and tastes DELICIOUS!)
